Sometimes I just love social media. How else would you be able to find out it’s National Homemade Cookie day?!

I love baking. There is just something about a warm, soft cookie right out of the oven. I have been lazy, as of late, and making cookies using mixes. “Box” cookies are still super tasty but there’s something satisfying about baking from scratch.

Now I didn’t have a homemade cookie today, but I did make a couple batches a few weekends ago with some alpha class sisters. I made a variation of these Raisin Pecan Oatmeal Cookies from Ina Garten using what I had in my pantry. I mixed the dough as plain oatmeal cookies than I added chocolate chips to half of the dough and raisins to the other half.

Both cookies were delicious but the oatmeal raisin were really something special. I soaked the golden raisins in bourbon (a play on rum raisin) the night before and the Jim Beam added a unique flavor to the cookie. I think I used just enough for a subtle hint that makes you want to take another bite.

I think these Oatmeal Pumpkin Cookies from Budget Bytes (I’m going to add chocolate chips) are the next cookie on my Fall baked goods to-do list (doesn’t everyone have one of those?     So funny you mentioned National Homemade cookie day – I had no idea until reading your post! Coincidentally, I blogged about cookies today too! My favorite is White Chocolate Chip without any macadamia nuts. Yum!
